Apples [peel, core and grate]
Preheat oven to 350°.
Grease 18 tins or use muffin cups.
In large bowl combine oil, water, sugar & eggs, beating until creamy. Mix in vanilla.
In separate bowl combine dry ingredients and slowly add to creamed mixture.
Fold in apples.
Fill muffin cups ¾
full and bake 20 to 25 minutes until top springs back.
