Beignets  With  Strawberry  Coulis



Beignets:

   1  cup  Tap Water
   1  cup  Milk
   1       Egg, beaten
   3  cup  All-purpose flour
   2  tbl  Baking Powder
   1  tsp  Salt
   2  tsp  Sugar
           Powdered Sugar for dusting

   6  qt   Vegetable oil
 

Strawberry Coulis:

   3  pts  Strawberries
   ½  cup  Sugar
 

In a bowl, mix water, milk, and beaten egg.

In a separate bowl, combine the flour, baking powder, salt, and 2 teaspoons sugar.

Add the dry ingredients to the wet ingredients and mix well.

Drop spoonfuls of the batter in 350° oil.  Fry for 4 minutes and turn over.

Fry for four more minutes until beignets are golden brown.

Remove beignets from oil and drain on a towel.  Dust heavily with powdered sugar.

Puree strawberries with  ½ cup sugar in processor.

Place the coulis on plate.  Place beignets on top of coulis.

Garnish with fresh strawberries.
