Birds  of  Paradise



         Boned chicken breast  [1 per serving]
 3       Eggs
 ½  cup  Milk
         Grated Parmesan cheese
 ½  cup  Sherry wine
 
 
 
 
 
 

Beat  eggs with milk.

Dip chicken in egg mixture and roll in grated Parmesan cheese.

Brown in electric skillet with melted butter.

Add sherry wine, cover and cook at 325° for 1 hour.

Gravy can be made with drippings, thickened with 1 tbl flour dissolved in ½ cup water.

Serve on bed of wild rice and garnish with parsley.
