Black  Eyed  Pea  Salad





 1  pkg  Black Eyed Peas  [16 oz]
 ¼  cup  Chopped Onion
 ¼  cup  Green pepper  [chopped]
 3  tbl  Diced Pimento
 ¼  cup  Ripe Olives  [sliced]
 ¼  cup  Vegetable Oil
 ¼  cup  Cider Vinegar
 2  tbl  Water
 2  tbl  Red Wine Vinegar
 1  tsp  Pepper
 ¼  tsp  Garlic Salt
   dash  Hot Sauce
 
 

Cook black eyed peas according to pkg directions and drain.

Combine peas,green pepper, onion, olives and pimento in a medium bowl.

Combine oil and next 6 ingredients in a jar.  Cover and shake well.

Pour dressing over vegetable mixture and toss gently to coat.

Cover and chill 2 to 3 hours.
