Crabmeat  Au  Gratin

 

 1  stick Celery  [chopped]
 1  cup   Onion [chopped]
 ¼  stick Butter or Margarine
 ¼  cup   Cornstarch
 1  can   Evaporated Milk [13 oz]
 2        Egg yolks
 1  lb    Crabmeat
 ½  lb    Grated Cheese
 

Saute onions and celery in butter until tender.

Mix cornstarch with a little of the milk.

Mix onions and celery with the remainder of the milk and add to the cornstarch mixture.

Beat egg yolks and add to the mixture.

Cook for 5 minutes.

Add crabmeat and mix well.  Season  to taste.

Pour into a lightly greased casserole and sprinkle with cheese.

Bake at 350° for 10 to 15 minutes.
