Dijon  Spinach  Salad




 1  lb   Fresh Spinach  [torn]
 6 slice Bacon [cooked & crumbled]
 2       Eggs  [hard-boiled, chopped]
 1  cup  Mushrooms  [fresh, sliced]

 ¼  cup  Vegetable Oil
 ¼  cup  Olive Oil
 2  tbl  Lemon Juice
 1  tbl  White Wine Vinegar
 ½  tsp  Dijon Mustard
 ¼  tsp  Salt
 ¼  tsp  Pepper
 
 
 

Combine first 4 ingredients in a large salad bowl; toss gently.

Combine remaining ingredients in a jar; cover tightly, and shake vigorously.

Pour dressing over spinach mixture; toss gently, and serve.

Serves 6.
