[cooked
& crumbled]

Eggs [hard-boiled, chopped]

Mushrooms [fresh, sliced]

cup Vegetable Oil

cup Olive Oil

Lemon Juice
1 tbl
White Wine Vinegar

tsp Dijon Mustard

tsp Salt

tsp Pepper
Combine first 4 ingredients in a large salad bowl; toss gently.
Combine remaining ingredients in a jar; cover tightly, and shake vigorously.
Pour dressing over spinach mixture; toss gently, and serve.
