Elegant  Pot  Roast




1        Chuck Roast  [3½ - 4 lb]

½   cup  Onions  [chopped]
¼   cup  Butter or Margarine [melted]
1        Bay leaf
2   tbl  Grated Orange Rind
¼   tsp  Ground Allspice
1/8 tsp  Pepper
1   can  Consomme  [10½ oz, diluted]
 

Saute onions in butter in a large Dutch oven until tender;

add meat, and brown on both sides.

Combine seasonings and diluted consomme; pour over meat.

Cover and simmer 2½ hours.  Remove bay leaf.

Serves 6 to 8.
