Lima  Beans


 2  cup     Dry Lima Beans
 7  cup     Cold water
 4  strips  Bacon or Ham
 

Rinse beans.  Bring water and beans to a boil.

Boil for 2 minutes; remove from heat, cover and allow to soak for 1 hour.

Drain off soak water.

Put soaked beans in 3 - 4 quart pot with 6 cups hot water.

Add salt and pepper to taste.

Add 4 strips of uncooked bacon or remnants of a baked ham.

Simmer gently with lid tilted until tender, about 1 hour.
