Margarita  Pork  Kabobs



 1  cup  Margarita Drink mix
           -or-
 1  cup  Lime Juice
 4  tsp  sugar
 ½  tsp  Salt

 1  tsp  Ground Coriander
 1 clove Garlic
 1  lb   Pork tenderloin  [cut in 1 inch cubes]
 2  tlb  Margarine  [softened]
 1  tlb  Parsley  [minced-fresh]
 2  tsp  Lime Juice
 1/8 tsp  Sugar
 1  lrg  Green or Red Bell Pepper  [cut into 1-inch cubes]
 2  ear  Corn  [cut into 8 pieces]
 
 

Combine margarita mix, coriander and garlic in large reuseable plastic food storage bag:

Add pork.  Seal bag: turn to coat.

Marinate in refrigerator at least 30 minutes, turning occasionally.

To prevent sticking, spray grill with nonstick cooking spray.

Prepare grill for grilling.

Combine margarine, parsley, lime juice and sugar in small bowl; set aside.

Alternately thread pork, bell pepper and corn onto skewers.

Place Kabobs on grill 4 inches from coals.

Grill 15 to 20 minutes or until pork is barely pink in center, turning occasionally and basting with margarine mixture.

Makes 4 servings.
