Boneless Pork Loin

Sweet Potatoes [peeled]

tsp Apple Pie Spice

Apples

Salt

cup Apple Juice

White Wine
Cube the pork and sweet potatoes in serving sized pieces.
In a skillet, brown the pork cubes. Add sweet potatoes.
Core, slice and add the apples.
Blend apple juice or white wine, brown sugar, apple pie spice and salt.
Pour over the top.
Place lid on skillet and
simmer until tender, about an hour.
FOR CROCK POT:
In the bottom of the crock pot; place apple slices, then sweet potatoes, then the browned pork cubes.
Pour combined juice, spices and salt over the top.
Place lid on and cook on
low for 8 to 12 hours.
