Potato  Salad   - German



 ½  lb   Bacon  [10 to 12 slices]
 ½  cup  Onion  [chopped]
 2  tbl  All Purpose Flour
 2  tbl  Sugar
 1½ tsp  Salt
 1  tsp  Celery Seed
 ½  cup  Vinegar
 6  cup  Potatoes [sliced, cooked]
 2       Eggs  [hard boiled]
         Parsley  [optional]
         Pimiento  [optional]
         Bacon curls  [optional]
 
 

Cook bacon till crisp; drain and crumble, reserving ½ cup fat.

Cook onion in reserved fat till tender.

Blend in flour, sugar, salt, celery seed and a dash of pepper.  Add vinegar and 1 cup water.

Cook and stir until thickened and bubbly.

Add bacon, potatoes and eggs.

Heat throughly tossing lightly.

Garnish with parsley and bacon curls.           Serves 8 to 10.
