Peel and dice potatoes into 3/8 inch cubes.
In a deep skillet, deep fry potatoes in hot oil until browned.
Remove potatoes and drain skillet.
Beat eggs and add salt and pepper to taste.
Return potatoes to skillet,
pour eggs over top and scramble.
