Potatoes  &  Eggs


    

 1  large  Potato  [per serving]
 1       Egg     [per serving]
         Salt
         Pepper
 

Peel and dice potatoes into 3/8 inch cubes.

In a deep skillet, deep fry potatoes in hot oil until browned.

Remove potatoes and drain skillet.

Beat eggs and add salt and pepper to taste.

Return potatoes to skillet, pour eggs over top and scramble.
 
 

OPTIONS:

Add - Cubes of  SPAM  when frying potatoes.
                -or-
Add - A cut up slice of ham luncheon meat when scrambling the eggs.
