Shrimp  Creole



 1  lb   Shrimp  [cleaned]
 1  lrg  Onion   [chopped]
 1 clove Garlic [chopped]
 ½  cup  Celery  [chopped]
 ½  cup  Green Pepper  [chopped]
 ¼  cup  Butter or Margarine
 2  tbl  Flour
 1  tsp  Salt
 ½  tsp  Black Pepper
 ¼  tsp  Red Pepper
         Parsley  [chopped fine]
 3½ cup  Tomatoes
 4  sm   Green Onions
 ½  cup  Water
 
 

Melt butter or margarine in skillet.

Saute onion, garlic, bell pepper and celery until onion is slightly browned.

Blend in flour.  Add all remaining ingredients except shrimp.  Mix well.

Cover and simmer for 20 minutes.

Stir in shrimp.  Cover and cook 10 minutes longer.

Serve over hot cooked rice.
