Texas  Red    ( CHILI )
 
 

 2  tbl  Vegetable Oil
 1  cup  Onions  [chopped] 
 2  lbs  Stewing Beef  [cubed]
 1 clove Garlic [minced]
 1  can  Tomato Paste [12 oz]
 2½ cup  Water
 1½ tbl  Chili Powder
 ½  tsp  Salt
 ½  tsp  Crushed Red Pepper
 ½  tsp  Dried Oregano
 ½  tsp  Cumin
 2  tbl  Peanut Butter
 1  can  Pinto Beans  [15½ oz, drained]
 1       Green Bell Pepper  [seeded and chopped]
 2       Jalapeno Peppers [pickled, rinsed, seeded & chopped]
 
 

In a large heavy pan, heat oil and brown beef cubes on all sides.

Add onions, bell pepper and garlic, and fry with beef for about 5 minutes.

Add all the remaining ingredients except beans, and simmer the for 1½ hours or until the meat is tender.

Add beans and simmer 30 minutes longer.
