3 cup Siced Zucchini
4 lrg Egg whites
1½ cup Poly-unsaturated Oil
2 tsp Vanilla
2 tsp Baking Powder
2 tsp Cinnamon
1¼ tsp Ground Clove
1 tsp Baking Soda
¾ tsp Nutmeg
Blend all the above together.
Add 2 cups brown sugar and blend again.
Add the blended mixture to a bowl containing ¾ cup all-purpose flour and ¾ cup whole wheat flour.
Mix well.
Bake in greased and floured pan at 350° for 45 minutes or until done.
Cool in pan for 10 minutes, then turn out on rack and cool completely.
Sift a small amount of confectioner's
sugar over the cooled cake.
